Dark Chocolate Coffee Cookies
Iβm obsessed with Oat Haus. They make granola butters with clean, simple ingredients and every single flavor is so delicious you can literally eat it straight from the jar.
They recently came out with a coffee flavor and I JUMPED online the moment it was released and got myself 2 jars. One jar to add to smoothies, on toast, etc. and one jar to bake with.
I was inspired to make this recipe from my Dark Chocolate Chunk Tahini Cookies, but challenged myself to use less ingredients. And lemme tell ya, it worked. Theyβre perfect.
These cookies made with coconut sugar because it doesn't leave you with that sugar rush feeling. I donβt want to say these are savory, but the espresso flavor in the coffee granola butter reallyyyy makes these cookies pop.
Dark Chocolate Coffee Cookies (yields 12-16 cookies)
Ingredients:
dry ingredients:
1 cup almond flour
ΒΌ cup coconut flour
1 tsp. baking powder
pinch of salt
wet ingredients:
1 egg
Β½ cup coconut sugar or golden monk fruit
ΒΌ cup coffee granola butter
dash of vanilla extract
add-ins:
flake salt to top (after cookies have finished baking)
Instructions:
preheat oven to 350Β°f and line a baking sheet with parchment paper
in a large mixing bowl (or stand mixer) combine wet ingredients and mix to combine
in a separate bowl, add in dry ingredients and mix to combine. transfer dry ingredients to bowl with wet ingredients and combine. fold in dark chocolate chips (or a roughly chopped dark chocolate bar)
roll dough into 1-1 Β½ inch balls and bake for 10-13 minutes. top with flake salt, cool, & enjoy!
notes:
if you donβt have coffee granola butter you substitute ΒΌ coconut oil + 1 tbsp. espresso powder but Iβm telling you, you NEED the coffee granola butter
if you want to use regular AP flour sub 1 cup flour
I prefer these cookies a little taller/pillowy but you can also press them down on the baking sheet after rolling to achieve a flatter cookie
